Ingredients

Quantities are for the whole recipe.

  • 300 g lean stewing beef, raw and trimmed
  • 400 g potatoes, peeled and raw
  • 100 g onion, peeled
  • 100 g carrot, trimmed
  • 200 g canned tomatoes, crushed, no added oil
  • 10 g olive oil
  • 4 g fresh parsley

1 bay leaf (remove); water, salt and pepper.

Method

  1. Dice the beef, finely chop the onion and slice the carrot. Soften the onion in the oil for about 5 minutes, add the beef and brown briefly.
  2. Add carrot, tomatoes, a bay leaf and about 500 ml water to cover the meat. Cover and simmer gently for 60-90 minutes. Stir occasionally and top up with water.
  3. When the meat is nearly tender, add diced potatoes. Simmer for another 25-30 minutes, or until both are tender. Add parsley and seasoning, remove the bay leaf and divide into two equal portions.

Allergens and labels: Check the canned tomato label if you have allergies.

Values are estimates per serving for the listed ingredients, including oil and any listed bread. Meat, rice and potatoes are weighed before cooking; cooked and drained foods are labelled explicitly. Products and moisture loss during cooking can affect the result. Pinches of seasoning and optional substitutions are not included. The cheese reference is reduced-fat cottage cheese. This is a meal idea, not a universal daily plan.
