Ingredients

Quantities are for the whole recipe.

  • 150 g skinless turkey breast, raw
  • 50 g long-grain rice, dry
  • 80 g carrot, trimmed
  • 100 g sweet pepper, deseeded
  • 5 g olive oil
  • 3 g fresh parsley

Water, salt and pepper.

Method

  1. Rinse and cook the rice in water according to the packet, without extra oil. Finely dice the carrot, slice the pepper and cut the turkey into pieces.
  2. Cook the turkey in the oil for a few minutes, turning it. Add the vegetables and a splash of water, lower the heat and cover.
  3. Cook until the vegetables soften and the turkey is done, about 10-15 minutes depending on piece size. The meat should reach 74°C on a food thermometer. Combine with rice and parsley.

Allergens and labels: Check labels of any seasoning blends you add.

Values are estimates per serving for the listed ingredients, including oil and any listed bread. Meat, rice and potatoes are weighed before cooking; cooked and drained foods are labelled explicitly. Products and moisture loss during cooking can affect the result. Pinches of seasoning and optional substitutions are not included. The cheese reference is reduced-fat cottage cheese. This is a meal idea, not a universal daily plan.
